Dashing Dishes

Paired with 2002 Bay of Fires Arras sparkling wine from Tasmania, the bread-crumbed lamb cutlets were an excellent prelude to what was up Wilkinson's sleeves. The only whetted our appetites. There is no better way to celebrate the fresh oysters than no to have them whole and raw. No frills. No fuss. The shucked clair de Lune gems were light, sans a strong metallic aftertaste that sometimes can put dinners off. Wilkinson (the chef) also served a deep fried version which was not dry and retained the original seafood taste.

The entree of a blue fin tuna was lughtly seared on its sides so that it was rare and a nice pink. This was paired with a slightly sweet sherry onion relish with pinenuts to give the extra crunch to an otherwise immaculately tender dish. Tenderness varies with rump because it is a working muscle. But Wilkinson seared the outside of a sher wagyu rump cap to a perfect pink, so that the meat did not become overly chewy yet was still juicy.

The 10-year-old restaurant continually fuels the imagination and creates wonder. Ezard loves Asian cuisine (and crustaceans) and he adapts these flavors with a hint of European influence. Wait staff looked spiffy in their T-shirts under a smart suit as they introduced every dish to minutes detail. Sommelier Michael Watt's choices hit all the right notes.

Even before the starters arrived, we were already impressed with the elaborate condiments to compliment fresh and warm bread (always welcomed!): ezard's famous parmesan, garlic and rosemary infused olive oil, and a dish with three power mixtures: sugar and chilli., sesame, nori and fish flakes and ground spices.

Every bites hold surprises. Take the oyster shooter, for example, which was brilliantly paired with 2001 Kreglinger Sparkling Pinot Noir Chardonnay, Pipers River. The first bite revealed a slightly briny yet clean taste. There was just the right amount of wasabi and ginger which gave a kick to the sublime appetiser. Chilled mirin and sake whose alcohol contents had been removed provided a well-polished finish.

Texture also figures largely in ezard's menu. Every mouthful held a burst of flavors: a sweet sauce was dripped over spiced apples. eage also married Sichuan-peppered duck (this was paired with 2006 Bilancia Shiraz Viognier, Hawkes Bay). He dressed it with stir-fried slikmelon, tumeric and coconut dressing.

Palazzo Versace Dubai

Hanabishi: Traditional Japanese Restaurant

Hanabishi is Traditional Japanese restaurant. It may be located on dodgy King Street, but don't let prohibit a trip to a traditional Japanese restaurant whose emphasis on freshness is second to none. After 18 years, Soga (the Chef) still goes to the fish market every morning to inspect and handpick his seafood like bluefin tuna toro for the day. To him, nothing more important than employing the right cooking methods and complimentary elements, both of which serve to highlight the freshness of ingredients.

Dashing dishes

The presentation of Barrumundi Shigoma personifies the renowned Japanese intricacy. A whole barramundi is deboned to perfection, wrapped in a crust made of egg white and salt (the crust doubles up as a "kiln") and enveloped in a bamboo leaf before being baked. This theatrical dish needed to 'broken into' before tucking into a fish that had a hint of smokiness. A mild citrus tang was a delight to palate. Condiments of chilled chestnuts and caramelised walnuts balanced the zing and saltness.

It may not be the best-looking fish in the ocean but the Patagonian toothfish transforms under the mastery of Soga. In Sugi-Ita Yaki, the chef wraps a slice in Japanese cedar wood before grilling it. The flesh was creamy and fragrant, and simply melted in the mouth.

Nothing can describe how the grade 9+ wagyu beef (only Blackmore wagyu beef is used at the restaurant) dissolved once gently place into the mouth. The first bite was ceremonious. One hardly need a second before the slice 'deliquesced'. Teeth sink into such tender texture, inviting an explosion of flavours to burst in the mouth. It was all at once smooth and buttery interlaced with Soga's concoction of onion, soy and garlic sauce.
